Coconut Apricot Truffles

These Coconut Apricot Truffles are the perfect bite size snack for when you are craving something sweet! So easy to make and full of nutrients, this is a recipe everyone can try at home. Perfect as an on the go treat or paired with a warm cup of tea! 

Ingredients

1 Cup of dried apricots

1/2 Cup of ground coconut or coconut flour

1 Tablespoon of coconut oil

1 tablespoon of maple syrup

1/2 teaspoon vanilla essence 

Desiccated coconut

cocoa powder

Instructions

1. Blend apricots in food processor, until small clumps are formed. Gradually add in coconut flour, coconut oil, vanilla and maple syrup and pulse until a sticky dough-like consistency is formed. 

2. Roll dough into little balls with about a 1 inch diameter, when all truffles are formed, place back in refrigerator for about 10 minutes to set.

3. Once truffles are slightly firmer, roll in desiccated coconut or cocoa powder for a light coating. 

4. Keep truffles refrigerated and ENJOY!
