Freezer Ready Egg Sandwiches

I know it is very common for students of any age to either pass on a healthy breakfast or opt for the quicker or unhealthy one. Trust me I am guilty of an occasional bacon egg and cheese at your local coffee shop or one of those muffins calling my name through the showcase glass. However, since I have come across this morning hack I have not only saved myself from breaking my bank account, but I also feel better knowing that I am having a preservative-free, wholesome breakfast. I have seen recipes for freezer ready egg sandwiches and they always left me skeptical, but after trying them for myself I am convinced they are just as good (dare I say better) than the store bought ones!
So lets get cooking! This is one of those recipes that has a ton of flexibility with different ingredients, so I recommend that you use whatever you prefer. This recipe will leave you with about six sandwiches, but you can either double or split that in half depending on how many you want to try. Just remember to adjust the quantity of your ingredients appropriately as well as your pan size. The basic ingredients needed for this recipe are bread, eggs, milk, vegetables, cheese, salt and pepper. Feel free to get as creative as you would like with this recipe, it should be something YOU want to eat and is going to satisfy your tastebud!
How to customize...
Eggs are the only ingredient that should stay constant throughout everyones. But, where we can start to switch things up is with the bread, vegetables and cheese.
When I make these, I like to use english muffins as my bread, but other tasty substitutes include whole grain bread, bagels, croissants, or whatever else you enjoy!

For vegetables I love the combined flavors of spinach and bell pepper, but broccoli, onion, asparagus, or any other vegetable of choice can work in your egg mixture. If you are a meat-lover and crave that extra protein in your sandwich try chopping up cooked meats like ham, bacon or sausage and mix that into your eggs as well.
Cheese is where you can customize within each batch, if you want to get fancy put a different type of cheese on each sandwich! I used cheddar and pepper jack which I think add the most flavor, but when it comes to cheese the possibilities are endless.
If you are gluten free or dairy-free your favorite bread, cheese and milk substitutes should work just as well. The possibilities are endless with this recipe so have fun with it and enjoy!!!
Ingredients...
6 eggs
1/2 cup of milk (low-fat, almond, etc.)
6 cheese slices
6 english muffins or bagels (if using bread, use 12 slices)
about 2 cups of vegetables of choice (chopped into small pieces)
Salt and pepper to taste

Instructions...
1. Preheat the oven to 350ºF.
2. In a large bowl whisk together eggs, milk, salt and pepper (like you're making a giant omelet).
3. Chop up vegetables of choice, (if needed) remove excess water. Proceed to stir the vegetables into the egg mixture.
4. Spray a 8x12 inch casserole dish with non-stick spray, and pour in the egg mixture. Make sure everything is evenly distributed throughout the dish.
5. Bake eggs for about 30 minutes, or until it is fully cooked through and sides have turned golden brown. Once cooked, remove dish from oven and allow to cool, then cut into 6 even pieces.
6. Assemble your sandwiches and then place it in a plastic bag, freeze up to a month.
7. When you're ready to eat, just microwave to defrost for one minute, then on high heat for another thirty seconds, then simply ENJOY!
